Lemongrass (Cymbopogon flexuosus) is the famous tropical lemon-flavored herb at the heart of Thai and Asian cuisine — and a beautiful, productive addition to any garden. Long, slender, pale green stems are thick and fleshy, delivering a distinct, clean lemon flavor that is essential in curries, soups, teas, and marinades. Use fresh or dried — slice into rings or strips and bruise segments to release the full flavor before adding to dishes. Freezes well for year-round use. A honeybee magnet and a valuable addition to any pollinator-friendly garden. Perennial in warm climates — bring indoors or overwinter in frost-free conditions in colder zones.
Start indoors 6–8 weeks before last frost in warm, moist soil. Lemongrass requires warm temperatures to germinate — use a heat mat for best results. Transplant outdoors after all frost danger has passed in full sun. Space plants 24–36 inches apart. Keep soil consistently moist. In Zones 8–10, lemongrass is perennial — in colder zones, bring containers indoors before first frost or treat as an annual. Harvest stalks when ½ inch or more in diameter at the base.
