Japanese Pickling Eggplant (Solanum melongena) is a long, slender Japanese heirloom variety producing 16-inch fruits with beautiful glossy purple skin and sweet, mellow, creamy flesh. As the name suggests, it lends itself perfectly to pickling — but it’s equally excellent grilled, stir-fried, or roasted. Mild and never bitter. Easy to grow from seed. 75–85 days from transplant.
Start indoors 8–10 weeks before last frost. Transplant outdoors after all frost danger has passed into warm soil in full sun. Space plants 18–24 inches apart. Water consistently. Harvest when skin is glossy and fruit gives slightly to pressure.
