Hollow Crown (Pastinaca sativa) is one of the oldest and most beloved heirloom parsnips in cultivation — a popular variety since the 1820s and still considered by many to have the best crisp, true parsnip taste of all. Long, tapering white roots grow 12–14 inches with a 2–3 inch shoulder, sweet and nutty with a rich, distinctive flavor that is best after the first frost. Growing Notes

Sow directly outdoors in early spring as soon as soil can be worked — parsnips need a long season and do not transplant well. Sow seeds ½ inch deep, 2–3 seeds per inch, in rows 18 inches apart. Thin to 3–4 inches. Parsnips prefer deep, loose, rock-free soil. Keep soil consistently moist until germination (can take 2–3 weeks). Harvest in fall after first frost for sweetest flavor, or leave in ground through winter.
