Hamburg Rooted Parsley (Petroselinum crispum var. tuberosum) is an old-fashioned heirloom predating the 1600s — grown differently than most parsley. This unique variety produces fleshy, parsnip-like roots up to 10 inches long that can be cooked as a vegetable. The dark green leaves can be used like ordinary parsley and are great for salads. High in vitamins A and C. A true dual-purpose plant — root and leaf. 200+ seeds per packet.
Direct sow outdoors in early spring as soon as soil can be worked. Sow seeds ¼ inch deep in rows 12 inches apart. Thin to 6 inches apart. Full sun. Keep soil consistently moist. Parsley is slow to germinate — soak seeds overnight to speed germination. Harvest roots in fall when they reach parsnip size. Leaves can be harvested throughout the season.
