Hamburg Rooted Parsley (Petroselinum crispum var. tuberosum) is an old-fashioned heirloom predating the 1600s — grown differently than most parsley. This unique variety produces fleshy, parsnip-like roots up to 10 inches long that can be cooked as a vegetable. The dark green leaves can be used like ordinary parsley and are great for salads. Growing Notes

Direct sow outdoors in early spring as soon as soil can be worked. Sow seeds ¼ inch deep in rows 12 inches apart. Thin to 6 inches apart. Full sun. Keep soil consistently moist. Parsley is slow to germinate — soak seeds overnight to speed germination. Harvest roots in fall when they reach parsnip size. Leaves can be harvested throughout the season.
