Green Sausage (Lycopersicon lycopersicum) is a unique elongated paste tomato that stays green at maturity — yellow-green with darker green stripes and sweet, complex flavor that surprises anyone expecting a bland green tomato. Meaty flesh with few seeds makes it excellent for sauces, salsas, and fresh eating. Prolific indeterminate plants produce abundantly all season. Open-pollinated and non-GMO.
Start indoors 6–8 weeks before last frost. Transplant outdoors after frost danger has passed, spacing plants 24–36 inches apart in full sun. Stake or cage. Water consistently. Harvest when fruits are fully striped and slightly soft — they stay green at maturity.
