Harvesting

Begin harvesting outer leaves when they reach 4–5 inches long — baby greens ready in as little as 21–30 days. Use the cut-and-come-again method: snip outer leaves while leaving the inner crown to regrow. Harvest in the morning for the best flavor and texture. For full heads, allow 45–65 days. Harvest whole heads before flower stalks appear — bolting causes bitterness. You may also cut the whole plant at the base leaving 1 inch of stem; it will often regrow a second cut. Storage: refrigerate in a plastic bag for 7–10 days. Do not store near apples or bananas — ethylene gas accelerates wilting.

Growing Notes

Direct sow ¼ inch deep, 1–2 inches apart, in rows 12–15 inches apart — or scatter thickly for a baby greens bed. Thin to 9–12 inches apart as plants develop. Start indoors 4–6 weeks before last frost for earliest production; transplants well. Full sun to partial shade. Nitrogen-rich, well-composted, well-draining soil (55–70°F ideal). Keep soil consistently moist — avoid letting it dry out. Succession sow every 2–3 weeks for continuous harvest. Sow late summer for a fall crop. Excellent for hydroponics, aquaponics, microgreens, and indoor containers.
