Frisée is the gourmet endive of French bistro salads — a beautiful, frilly-leaved green with a slightly bitter but mild taste that makes it the perfect addition to mixed greens and composed salads. Plants grow 8–12 inches tall and produce fine, frilly leaves in yellow-green with white ribs that are as ornamental as they are delicious. Excellent cooked as well as raw. Rich in vitamins A and K, folate (B9), and manganese, with a great source of fiber. Plant in early fall for late-season harvests well after the first frost. 50–59 days.
Direct sow outdoors in early fall for late-season harvest, or in early spring 4–6 weeks before last frost. Sow seeds ¼ inch deep, 2–3 inches apart. Thin to 8–10 inches. Full sun to part shade. Keep soil consistently moist. Harvest outer leaves as needed or cut whole plant at soil level. Blanch heads by tying outer leaves over the center for 1–2 weeks to reduce bitterness.
