Beta vulgaris — Fantasia Orange is the Swiss chard that earns its place in the garden on color alone — then keeps earning it with flavor. Vivid carrot-orange stalks, midribs, and veins contrast dramatically against dark, shiny, savoyed green leaves. What sets Fantasia apart from other colored chards: it holds that brilliant orange color even when cooked. Slow to bolt. Baby leaves ready in 30 days; full maturity at 55 days. An outstanding container variety and a showpiece in any kitchen garden.
Use baby leaves raw in salads and grain bowls — the orange veins are stunning against other greens. Sauté mature leaves with garlic and olive oil; the color deepens rather than fades. Add to frittatas, pasta, and soups. Use the colorful mature stalks in salads or relishes. The crisp stalks are excellent pickled in rice vinegar.
Direct sow outdoors from early spring through August. Sow ½ inch deep in fertile, moist, well-prepared soil in full sun or partial shade. Thin to 3 inches for baby leaves, 6–9 inches for full-size plants. Water consistently. Harvest outer leaves regularly to promote continuous new growth.
