In the Kitchen

Use baby leaves raw in salads and grain bowls — the orange veins are stunning against other greens. Sauté mature leaves with garlic and olive oil; the color deepens rather than fades. Add to frittatas, pasta, and soups. Use the colorful mature stalks in salads or relishes. The crisp stalks are excellent pickled in rice vinegar.

Growing Notes

Direct sow outdoors from early spring through August. Sow ½ inch deep in fertile, moist, well-prepared soil in full sun or partial shade. Thin to 3 inches for baby leaves, 6–9 inches for full-size plants. Water consistently. Harvest outer leaves regularly to promote continuous new growth.
