Early White Vienna Kohlrabi (Brassica oleracea var. gongylodes) is a classic pre-1860 heirloom — purple-skinned bulbs that grow above ground with crisp, white flesh that is delicious cooked or raw. Leaves are eaten like kale; white-fleshed bulbs are eaten like broccoli. Harvest when tennis ball-sized for best flavor and texture. A real staple crop with high yields and excellent cold hardiness. Rich in vitamin C, fiber, protein, and a variety of minerals. 55–70 days. 100+ seeds per packet.
Start indoors 4–6 weeks before last frost, or direct sow outdoors as soon as the ground can be worked. Sow seeds ¼ inch deep in rows 12–18 inches apart. Thin to 6 inches apart. Full sun. Keep soil consistently moist. Harvest bulbs when tennis ball-sized (2–3 inches) for best flavor — spring-sown kohlrabi can get woody if left too large. Fall-grown kohlrabi tolerates larger size without becoming fibrous. Cold hardy to about 10°F.
