Also known as ‘Dragon Langerie’ or ‘Merveille de Piemonte’, Dragon Tongue is probably the best multipurpose bean available — tasty, high-yielding, and perfect for the home gardener. Large 6–8 inch cream-colored pods with vivid purple stripes are stringless, broad, and exceptionally crisp and juicy. Pick as a fresh snap bean when pods change from lime green to buffed yellow with bright purple stripes. When stripes turn from purple to red, pick as a tasty shell bean. Stripes disappear completely during blanching, indicating freezer readiness. Allow pods to fully mature for dried beans. Very popular with gourmet chefs. Light brown seeds with dark mottling. 50–60 days.
Direct sow outdoors after last frost when soil has warmed to at least 60°F. Sow seeds 1 inch deep, 2–3 inches apart, in rows 18–24 inches apart. Full sun. Water consistently. Harvest at snap stage (yellow with purple stripes), shell stage (stripes turning red), or dry stage (fully mature pods).
