The Detroit beet is the gold standard of heirloom beets — uniform, sweet, productive, and as reliable as any vegetable in the garden. This collection brings together all three colors of the Detroit family in one kit: the classic dark red, the stunning golden orange, and the clean snow-white. Three varieties, three flavors, zero bleeding on your cutting board (well, except for the red). Roast them together for a stunning side dish, pickle them for the pantry, or harvest the greens early for a bonus salad crop.

What's in the Collection

• Detroit Dark Red — the original heirloom standard; deep crimson interior, uniform 3-inch globe shape, rich earthy-sweet flavor; excellent for canning, roasting, and pickling
• Golden Detroit — warm orange-gold roots that won't bleed when cooked; very sweet, mild, and beautiful on the plate; bolt-resistant and reliable
• White Detroit — snow-white roots, completely stainless; sweet, mild, and clean-flavored; no staining on hands or cutting boards

Occasionally a variety may be temporarily out of stock. When that happens, we'll substitute an equally wonderful heirloom beet variety so your kit always arrives with 3 full packets of seed.

In the Kitchen

Roast all three together — the color contrast on the plate is stunning. Slice Golden and White Detroit raw into salads for sweetness without staining. Pickle Detroit Dark Red for a classic pantry staple. Sauté the beet greens from any variety with garlic and olive oil — they're as good as chard. Blend roasted red beets into hummus or pasta sauce for a vibrant color boost.

Growing Notes

Direct sow outdoors 4–6 weeks before last frost in spring, or in late summer for a fall harvest. Sow seeds ½ inch deep, 2–3 inches apart; thin to 3–4 inches for full-size roots. Full sun to part shade. Keep soil consistently moist and free of rocks for smooth, uniform roots. Harvest at 50 days when roots reach 2–3 inches in diameter. Don't forget the greens — harvest outer leaves throughout the season.
