Cylindra (Beta vulgaris) is the beet that changes how you think about beets. Instead of the familiar round globe, Cylindra produces long, cylindrical dark red roots β 5 to 8 inches long and 2 inches thick β that are sweet, tender, and ideal for slicing into uniform rounds. The cylindrical shape means more usable root per plant and more even slices for pickling, canning, and cooking. The leaves are a little sweeter than other beets and make lovely salad greens. Produces more in the same space. Perfect for container gardening and raised beds. 59β70 days.
Direct sow outdoors 4β6 weeks before last frost or in late summer for fall harvest. Sow seeds Β½ inch deep, 2β3 inches apart, in rows 12β18 inches apart. Thin to 3β4 inches. Full sun to part shade. Keep soil consistently moist. Harvest at 59β70 days when roots reach desired size.
