Curled Chervil (Anthriscus cerefolium) is one of the four classic French fines herbes — alongside parsley, tarragon, and chives — and one of the most underappreciated herbs in the English-speaking world. Upright, hardy annual plants grow 1–2 feet tall with bright-green, lacey, deeply curled leaves that carry a fresh, verdant aroma with a delicate flavor somewhere between parsley and anise. Use the tender leaves fresh as a garnish for omelets, fold them into salads, stir them lightly into warm soups, or blend them into a pasta sauce. Chervil is best used fresh — heat diminishes its delicate flavor — and it freezes beautifully for winter use.
Direct sow outdoors in early spring or fall — Chervil prefers cool weather and bolts in heat. Sow seeds on the soil surface or barely cover; seeds need some light to germinate. Thin to 6–8 inches apart in part shade to full sun. Keep soil consistently moist. Succession sow every 2–3 weeks for continuous harvest. Harvest leaves before flowering for the best flavor. Self-sows freely once established.
