Charleston Wakefield, Heirloom Cabbage Seeds — The 1880 Long Island Selection From Early Jersey Wakefield | Larger 4–6 lb Conical Heads, 70–85 Days, Overwinters in South

Charleston Wakefield (Brassica oleracea var. capitata) is the result of a selection from Early Jersey Wakefield made on Long Island, sold to the F.W. Bolgiano Seed Co. in 1880. It produces a larger head than other Wakefield cabbages — each head weighing about 4–6 pounds with the same distinctive conical shape. Short season at only 70 days. Stores well and overwinters for those in the South — overwinters better than Copenhagen Market. Approximately 6,500 seeds per ounce. 300+ seeds per packet.

Why Grow Charleston Wakefield?

  • 1880 Long Island selection — sold to F.W. Bolgiano Seed Co.; a proven heirloom with deep American roots
  • Larger than other Wakefield cabbages — 4–6 lb conical heads vs. the smaller Early Jersey Wakefield
  • Short season — only 70 days — one of the faster maturing larger cabbages
  • Excellent storage — stores well after harvest
  • Overwinters in the South — better overwintering than Copenhagen Market
  • Open-pollinated heirloom — save seed year after year; ~6,500 seeds per ounce

In the Kitchen

  • Fresh eating: Mild, sweet flavor excellent raw in salads and slaws
  • Coleslaw: Dense, crisp heads shred beautifully
  • Sauerkraut: Large dense heads ferment well
  • Storage: Keeps well in cool storage after harvest
  • Cooking: Braise, roast, or add to soups and stews

Growing Notes

Start indoors 6–8 weeks before last frost and transplant after last frost for summer harvest, or direct seed in mid to late summer for fall harvest. Plant in full sun, spacing plants 18 inches apart in fertile, well-drained soil. Water consistently. Heads mature in 70–85 days. In the South, plants can overwinter in the field — better overwintering performance than Copenhagen Market.
