Foeniculum vulgare ‘Purpureum’ — Bronze Fennel is the ornamental fennel — the one that earns its place in the garden on beauty alone, then delivers culinary and ecological value on top. Decorative bronze-purple lacy foliage that adds sophisticated color contrast to herb gardens, borders, and containers. Slow to bolt. Self-sows freely. A pollinator favorite: the bushy yellow blooms host swallowtail butterflies and attract a wide range of beneficial insects. The anise-flavored seeds are delicious in baking and meat dishes. Non-bulbing type.
Add fresh bronze fronds to salads, coleslaw, and grain bowls for anise flavor and visual drama. Use as an elegant garnish for fish dishes, soups, and cheese boards. Infuse into olive oil or vinegar. Use seeds in Italian sausage, bread, biscotti, and spice rubs for pork and fish.
Direct sow only — fennel does not transplant well. Sow as soon as soil is warm enough; soak seeds 1–2 days before planting for better germination. Plant ½ inch deep, 8–12 inches apart in a well-drained, sunny location. Keep well-watered until established. Self-sows freely — allow some plants to go to seed for a permanent colony. Note: fennel is allelopathic — keep away from tomatoes, peppers, and most brassicas.
