Brilliance (Daucus carota) is a striking heirloom red carrot with smooth, cylindrical, completely coreless roots that grow 8–10 inches long with a beautiful deep red hue unlike any standard orange variety. No tough pale center — the color, texture, and sweet flavor are consistent from skin to center. High in beta-carotene. Tops reach 10–12 inches and are attractive in the garden. Best grown in spring with direct sowing in full sun. Certified organic seed. 1.0 g / 700+ seeds per packet. 75 days to maturity.
Most carrot varieties have a visible pale core — the xylem tissue at the center of the root — which is tougher and less flavorful than the surrounding flesh. Brilliance was selected for a coreless root, meaning the deep red color, crisp texture, and sweet flavor run consistently from the skin all the way to the center. This makes it exceptional for fresh eating, slicing into salads, and any preparation where the cross-section is visible — no pale center to detract from the striking red color.
Best grown when planted in spring. Direct sow ¼ inch deep in full sun in loose, well-tilled, well-drained soil with no stones — compacted or rocky soil causes forked, stunted roots. Sow 2–3 seeds per inch and thin to 2–3 inches apart as true leaves establish. Keep soil consistently moist until germination (14–21 days) — uneven moisture causes cracking. Avoid nitrogen-rich fertilizers, which cause forking and growth abnormalities. For a continuous harvest, succession sow every 2–3 weeks through spring. Harvest when roots reach desired size — 8–10 inches at full maturity, or pull earlier for baby carrots.
Brilliance’s red color comes from lycopene and beta-carotene, which are more heat-stable than the anthocyanins in purple carrots. The color holds reasonably well through roasting and light cooking, though it will soften somewhat with prolonged heat. For the most vivid color, use raw or lightly cooked.
