Blue Hubbard is the winter squash that commands attention. Huge, teardrop-shaped fruits weighing 15–40 pounds with a distinctive blue-gray skin so hard it makes Blue Hubbard one of the longest-lasting squashes in winter storage — seeds remain viable for 6 years under cool, dry conditions, and the fruits themselves keep for months. Inside, sweet, fine-grained, golden flesh is exceptional for baking, pies, and soup. Give the vines plenty of room to run, or train them up a fence to save space. Direct sow outdoors after last frost when soil has warmed to at least 65°F, or start indoors 3–4 weeks before last frost. Sow seeds 1 inch deep in fertile, well-draining soil. Space plants 48–60 inches apart in full sun — vines need ample room. Water consistently. Harvest at 100 days when rind is hard and fully blue-gray. Cure in a warm, dry location for 10–14 days before storage.
