Brassica oleracea — Bok choy (also called pak choi) is one of the most productive and versatile cool-season greens you can grow. Juicy, succulent white stalks and glossy dark green leaves with a mild, clean flavor that makes it the go-to green for stir-fries, soups, and salads. Harvest baby heads in just 30 days, or grow to full size in 45–60 days. Bolt-resistant, container-friendly, and ranked among the most nutrient-dense vegetables available.
Sow in spring for early summer crops, or 6–8 weeks before fall frost for fall harvest. Direct sow ¼ inch deep; thin to 6–8 inches for full heads, 3–4 inches for baby harvest. Prefers full sun to partial shade — shade helps prevent bolting in summer. Fertile, well-drained soil, pH 6.0–7.5. Consistent moisture is critical; bok choy is shallow-rooted and requires frequent watering. Best at 45–75°F.
