Arugula Slow Bolt is the Italian salad green that has been beloved in Mediterranean kitchens for centuries — and for good reason. Fast-growing and cool-season hardy, it delivers a sharp, distinctive, peppery-nutty flavor that is best when leaves are picked young at 2–3 inches long. Baby leaves are ready to harvest in just 22 days, with full maturity at 45–50 days. Self-seeding and hardy, it naturalizes easily in the garden and keeps coming back season after season.
Leafy plants grow 6–12 inches tall and produce tiny, delicate flowers that are also edible — a beautiful and productive addition to any salad garden.
Direct sow outdoors 4–6 weeks before last frost in spring, or in late summer for a fall crop. Scatter seeds on the soil surface and press in lightly — arugula needs light to germinate. Thin to 4–6 inches apart. Water consistently. Harvest outer leaves regularly for continuous production. Succession sow every 2–3 weeks for a steady supply. In warm weather, provide afternoon shade to slow bolting.
