Argenteuil (Asparagus officinalis) is the legendary French heirloom asparagus — the variety that made the town of Argenteuil near Paris famous for centuries of gourmet asparagus production. Tender violet-purple spears with mild, sweet flavor emerge each spring from an established crown, returning dependably for 15 years or more. Blanch the spears by mounding soil over the emerging tips to produce the prized traditional white asparagus of French cuisine. A true perennial investment — plant once and harvest every spring for a generation.
Start seeds indoors 12–14 weeks before last frost, or direct sow in early spring. Sow 1 inch deep. Transplant seedlings to a permanent bed in full sun with rich, well-draining soil. Asparagus grown from seed takes 2–3 years to establish — harvest lightly in year 2 and fully from year 3 onward. To produce white asparagus, mound soil or mulch over emerging spears to exclude light. Harvest spears at 6–8 inches before tips open.
