In the Kitchen

Scoop flesh and roast cut-side down at 400°F until tender — the sweet, dense flesh caramelizes beautifully. Puree roasted flesh for pies, quick breads, muffins, and soups. Use in curries and risotto. Freeze pureed flesh in portions for year-round use. The mild sweetness and fine grain make it one of the best pie squashes available. One fruit can easily feed a family for weeks — plan to preserve, can, or freeze the surplus.

Storage & Curing

After harvest, cure at 80–85°F for 10–14 days to harden the skin and concentrate sugars. Store in a cool (50–55°F), dry, well-ventilated location. Properly cured Jumbo Pink Banana can keep 3–6 months — often well into late winter.

Growing Notes

Direct sow outdoors 1–2 weeks after last frost in full sun, or start indoors in individual pots 3–4 weeks before transplanting. Sow 1 inch deep. Space plants 48–60 inches apart — vines spread 8–12 feet and need ample room. Rich, well-draining soil (pH 6.0–6.8). Water consistently at the base; avoid wetting foliage. Harvest when skin is fully hardened and the stem has dried and corked completely. Use pruning shears — do not pull.
