  • Stir-fry: Halved or quartered; add to wok in the final 2 minutes — wide petioles hold texture beautifully at high heat
  • Steamed whole: Steam entire heads until just tender; finish with hot garlic oil and soy sauce for a classic Cantonese preparation
  • Braised: Whole heads braised in chicken broth with ginger and Shaoxing wine — compact size means they hold together perfectly
