Kale, White Russian,

White Russian has better cold hardiness and is just as sweet and tender as Red Russian. A flat-leaf Siberian type, silvery green with white veining. Similar to Red Russian, but a few inches taller, a third more productive, with larger, more serrated leaves. Also, White Russian is much hardier, Non-GMO, Open Pollinated. New kale bred by Frank Morton 21 days for baby leaves, 50 days for full size.

The earliest starts begin 3-4 weeks indoors before transplanting. Plant 3-4 seeds 1/4 inch deep per cell, or 6 in. apart in well-drained, rich soil in partial shade to full sun. Germinates in 3-10 days, thin back to 1 plant per pot or every 8-12 inch as true leaves establish. Extended summer heat will cause greens to bolt and become bitter.

Kale is one of the healthiest vegetables on earth, a true superfood rich in carotenoids and flavonoids. These are two powerful antioxidants that protect our cells from free radicals and are reported to fight against cancerous cell formation specifically. One cup of kale has just 36 calories, zero g of fat, a whopping 684% of RDA of K, 206% of A, and 134% of C vitamins.
