Introduced to the seed trade in 1941, Catskill (Brassica oleracea var. gemmifera) is one of the most reliable and productive Brussels sprouts varieties ever developed. Very strong growth on robust 20–24-inch stalks produces richly flavored sprouts 1½–2 inches in diameter — firm, prolific, and easy to pick. Excellent for fresh eating or freezing. The flavor is outstanding and only gets better after the first frost — cold temperatures convert starches to sugars, making Catskill noticeably sweeter as the season progresses. Growing Notes

Start indoors 4–5 weeks before transplanting, then transplant to permanent locations approximately 100 days before the first fall frost. Brussels sprouts require fertile, heavy soil and consistent moisture — they turn bitter when allowed to dry out. Mulch around the base to retain moisture in hot months. Space plants 18–24 inches apart in full sun. Harvest when sprouts are 1½–2 inches in diameter and tight. Break off the leaf directly below each sprout to encourage continued production up the stalk.
