Green Thumb (Amaranthus sp.) is a lovely upright amaranth — a compact shrub growing 3–5 feet tall that is excellent for borders, containers, and floral arrangements. Younger leaves have a milder flavor and are excellent in salads; mature leaves develop a rich, spinach-like flavor perfect for cooked dishes. Use as a spinach substitute in any recipe. Tasty seeds can be eaten raw, sprouted, toasted, roasted, or ground into flour for baking. A beautiful and productive dual-purpose heirloom. 50–60 days.
Direct sow outdoors after last frost in full sun to part shade. Sow seeds on the surface or barely cover. Thin to 12–18 inches. Warm soil preferred — ideal temperature 65–90°F. Harvest young leaves at 20–30 days for salads. Allow to mature for grain harvest at 50–60 days.
