Green Thumb (Amaranthus sp.) is a lovely upright amaranth — a compact shrub growing 3–5 feet tall that is excellent for borders, containers, and floral arrangements. Younger leaves have a milder flavor and are excellent in salads; mature leaves develop a rich, spinach-like flavor perfect for cooked dishes. Use as a spinach substitute in any recipe. Tasty seeds can be eaten raw, sprouted, toasted, roasted, or ground into flour for baking. A beautiful and productive dual-purpose heirloom. 50–60 days.
