Red Noodle Yard Long (Vigna unguiculata subsp. sesquipedalis) is a spectacular Asian heirloom pole bean — deep burgundy-red pods growing 12–22 inches long on vigorous 8–10 foot climbing vines adorned with gorgeous purple-blue flowers. Well-known in southern China, Red Noodle is a heat-loving, productive bean that thrives in hot summers where other bean varieties struggle. String-free pods are tender and flavorful — essential in Sichuan cuisine, excellent stir-fried, steamed, pickled, or deep-fried. Resistant to white mold. A stunning ornamental and culinary plant that can grow up to an inch a day in peak summer. 50–75 days.
Red Noodle is the bean used in the classic Sichuan dish Dry-Fried Beans — cut into 2-inch sections, deep-fried until blistered, then tossed with garlic, ginger, and chili. Use in stir-fries, steamed as a side dish, added to soups, or pickled for a crunchy condiment. Prepare by cutting into 2-inch sections — the long pods make prep easy and fast. Lightly steam young leaves and stems and toss with olive oil for a nutritious side. Note: The deep red color is lost when cooked — pods turn green. Harvest before pods become thick and seeds start to bulge for the best texture and flavor.
Pair Red Noodle with cucumbers, eggplants, or corn — companion planting improves pollination and pest resistance. As a nitrogen-fixing legume, Red Noodle enriches surrounding soil, benefiting neighboring heavy feeders.
Direct sow only — beans do not transplant well and root disturbance reduces yields. Sow 1 inch deep directly into warm soil (above 60°F) after last frost. Space seeds 4–6 inches apart in rows 24–36 inches apart. Set up an 8–10 foot trellis or sturdy support at planting — these vines grow fast. Full sun, 6–8 hours minimum. Well-draining, fertile loamy soil (pH 6.0–6.8). Water 1 inch per week at the base; avoid overhead watering to reduce fungal disease. Mulch to retain moisture. Side-dress with compost or phosphorus-rich fertilizer at mid-growth to support flowering and pod development. Harvest when pods are 12– 22 inches, firm and glossy, before seeds bulge. Use scissors or a sharp knife — do not pull.
