In the Kitchen

Roast halved pumpkin at 375°F until tender; scoop flesh for pies, soups, and muffins. Cube and roast with olive oil, salt, and spices. Purée for pumpkin butter, bread, and pancakes. Toast the seeds with salt and olive oil for a nutritious snack.

Growing Notes

Plant seeds outdoors after all frost risk has passed and soil temperature reaches 65°F. Plant 3–5 seeds 1 inch deep per mound; thin to 2 strongest seedlings after germination (6–10 days). Water deeply but infrequently — pumpkins are 80–90% water but prefer deep, infrequent drinks over daily watering. For maximum size, grow one pumpkin per vine. Harvest when skin is fully orange; cut with a 2–3 inch stem attached. Count back from your target date — most varieties need 85–125 days.
