Hopi Red Dye Amaranth is an heirloom variety that grows 4½ to 6 feet tall. It features dark purple-green leaves, purple stems, and cascading clusters of deep purple-red flowers. Cultivated by the Hopi Nation, this plant produces the reddest seedlings of any amaranth variety and is used to make a natural scarlet food dye from its flower bracts for coloring piki bread. Young amaranth leaves are great for sautéing and can replace spinach in salads or cooked dishes. Both the leaves and stems are good for cooked greens, while the protein-rich seeds can be harvested for grain. Mature leaves can be prepared, like kale or spinach, and the protein-rich seeds can be harvested for grain. The crushed seeds add a unique red hue to cornbread.
