Cannellini Bush Dry Bean Seeds. Pure white beans are delicious and creamy, yet hold their texture well when cooked. Heavy yields of attractive, white kidney beans. Pods avg. 51/2”. Large, upright, bush plants keep beans off the ground. Excellent eating quality both as a shell or dry bean. This Italian heirloom first appeared in America in the early 1800s. Beans can be used at the shell bean stage but are generally allowed to remain on the plants and harvested as dry beans. They have a nutty, earthy flavor and tender flesh, and are often used in Italian dishes like Minestrone. One of the best things about this bean is that it doesn’t shatter during harvest. Many heritage bean varieties drop beans on the ground before all the pods ripen, but the Silver Cloud Cannellini beans stay in the pod until harvest, 75 80 days shell; 98 days dry.
