At 35 days, tender baby greens are ready to cut. At 45 days, full leaf greens with tall, vigorous dark green stalks striped in maroon veins can be harvested for salads. At 55–60 days, the deep red round beetroots are ready — sweet, nutritious, and versatile in the kitchen. This variety thrives in colder weather and is a first early variety prized for mid-summer sowing and storage. Growing Notes

Sow seeds 3–4 weeks before the average last frost date. To encourage germination, soak seeds for 24 hours before planting. Direct sow ½ inch deep, 1 inch apart, in rows 12 inches apart. Thin to 3 inches for root production. Full sun to partial shade. Prefers soil temperature of 65–75°F and a pH of 6.0–7.5 — light, moist soil preferred. Water consistently; beets thrive in cool weather but tolerate warmer conditions. Harvest baby greens at 35 days, full greens at 45 days, and roots at 55–60 days when 1–3 inches in diameter. Eat tops before any sign of wilting for maximum flavor. Leave stem plug in place and skin on while cooking to minimize color bleeding. Vinegar and walnut oil pair exceptionally well with beets.
