Common Chives – The Easiest Perennial Herb in the Garden

Common Chives (Allium schoenoprasum) are one of the most versatile, low-maintenance herbs you can grow. A tenacious perennial with weed-like vigor, chives come back year after year with minimal care — one of the first herbs to emerge in spring. Growing to 16" tall, chives produce slender, hollow leaves with a mild green onion flavor and stunning light fuchsia-purple allium blooms that are fully edible and irresistible to bees and butterflies.

A member of the onion family alongside garlic and leeks, chives offer a more delicate flavor than larger root crops. Excellent in the kitchen, beautiful in the garden, and a powerhouse companion plant. Non-GMO, open-pollinated, heirloom.

Why Grow Common Chives?

  • Hardy perennial — returns year after year, one of the first herbs up in spring
  • Mild green onion flavor — fresh leaves for salads, potatoes, eggs, soups, fish & more
  • Edible fuchsia-purple flowers — beautiful garnish, pollinator magnet, and great for chive blossom vinegar
  • Excellent companion plant — improves carrot growth, deters carrot fly, controls black spot under roses
  • Natural pest & disease control — acts as an organic insecticide, controls fungal infection, mildew, and scab
  • Drought-tolerant — low maintenance once established
  • Rich in vitamins A & C, calcium, iron, and trace sulfur

Growth Habits

  • Days to Maturity: 60 days
  • Days to Germination: 7–21 days
  • Plant Height: 16"
  • Growth Habit: Upright clumping perennial
  • Flowers: Light fuchsia-purple allium blooms in late spring
  • Light: Full sun to part shade
  • Soil: Fertile, well-drained
  • Hardiness Zones: 3–10

Starting & Growing Tips

  • Cool-season crop — sow direct or start indoors in early spring or early fall
  • For indoor starts, begin 6–8 weeks before transplanting
  • Plant 2–3 seeds 1/4" deep per cell, or 2–4" apart in the garden
  • Use fertile, organic, well-drained soil with full sun to part shade
  • Germination: 7–21 days
  • Thin to 1 per pot or 4–6" apart in the garden as true leaves establish
  • Water consistently for best flavor — drought-tolerant but flavor improves with moisture
  • Divide clumps every 2–3 years to maintain vigor
  • Deadhead flowers to prevent vigorous self-seeding if desired

Harvesting

Harvest once shoots reach 6" long. Snip bunches about one-third of the way up the shoot — never trim all the way to the base until end of season. Do not harvest more than 80% of the plant at once. Fresh chive shoots can be stored for several days by standing them in a glass of water on the countertop. Dry plenty for gifts — homemade dried chives make a wonderful holiday present!

Culinary Uses

Chives are endlessly versatile in the kitchen — from baked potatoes and scrambled eggs to soups, salads, fish dishes, and compound butters. The edible flowers add a mild onion flavor and stunning color as a garnish. Try making chive blossom vinegar with the blooms for a gourmet pantry staple. Great grown in patio pots, garden borders, and as a companion plant throughout the vegetable garden.
