True Dandelion, Greens

TRUE WILD Dandelion
An ancient herb that is both nutritious and medicinal. Despite being widely known best as a garden weed in North America. True Dandelion seeds, also known as Wild Dandelion, have an astonishing range of health benefits. Steamed like spinach, they have a pleasant "wild" flavor. Raw, they add a bite to a salad. Frequently used in salads, sauteed, or egg dishes, this heirloom dandelion delivers a complex, bitter, yet sweet flavor. They have toothed basal leaves, deep taproots, and golden flowers, all edible. As food or tea, the leaves are a potent diuretic high in potassium, replacing the potassium lost during urination. The leaves are also very rich in vitamins (A, C, D, and B) and minerals (iron, magnesium, zinc, potassium, manganese, copper, choline, calcium, boron, and silicon). Detoxifying herbs--encourage the steady elimination of toxins from both sickness and pollution. Roots were dug for and roasted as a coffee substitute. Young leaves are good in mixed greens, both raw and cooked. Pick leaves when young before the plant blooms. Re-seeds aggressively-keep flowers picked. 80 days to leaf. One hundred forty days for root harvest.
