Growing Notes

Direct sow outdoors after last frost when soil has warmed to at least 60°F, or start indoors 4–6 weeks before last frost. Sow seeds on the soil surface or just 1/8 inch deep — amaranth needs light to germinate. Thin to 12–18 inches apart. Full sun. Water consistently until established; drought-tolerant once mature. Harvest young leaves at 50–60 days for salads. For grain, allow seed heads to fully mature and dry on the plant (90–100 days), then harvest and thresh.
