Green Wave mustard grows up to two feet tall, is dark green, spineless, deeply fringed, and has been a long-standing American favorite. The spicy flavor is commonly used in salad mixes and traditional Southern greens. Curled and frilly medium green leaves stay tender; upright plants reach 2 feet tall. Green Wave Mustard tolerates more heat than most and can be grown in mid-summer. Bolts are very late, stand weeks longer than other varieties, are very high-yielding, and are a true champ in the garden. It is excellent for backyard and market growers and is also very cold-hardy. It has a mildly pungent (spicy hot) flavor, nice and spicy! It is also good for salads and garnishes and is used as a highly nutritious and vitamin-rich boiled green. A high-yielding type that makes a good crop in home gardens and makes choice micro-greens. Very easy to grow. 50 days (mature) or 20 days (baby greens).
