Purslane is considered the topmost nutritious food on the planet. Purslane is a tasty, easy-to-grow, and rich source of omega-3. They look like baby jade plants. The stems lay flat on the ground as they radiate from a single taproot, sometimes forming large mats of leaves. It is considered a nutritional powerhouse, offering huge amounts of minerals like calcium, iron, magnesium, potassium, omega-3 fatty acids, vitamins (A, B, C), and antioxidants. Fresh leaves contain surprisingly more omega-3 fatty acids (α-linolenic acid) than any other leafy vegetable plant. It is thought to be an essential component of the Cretan high-life-expectancy diet. Purslane is somewhat crunchy and has a slight lemony taste. Some people liken it to watercress or spinach, which can substitute for spinach in many recipes. Young, raw leaves and stems are tender and are good in salads and sandwiches. They can also be lightly steamed or stir-fried.
