Corn Salad (Mâche), Heirloom Greens Seeds — The Cold-Hardy Winter Salad Green With Nutty Flavor

Also known as Mâche, Lamb Lettuce, and Vit, Corn Salad is the gourmet green that fills the salad bowl when everything else has gone to sleep. This Dutch heirloom variety is mildew-resistant, with long, oval, glossy green leaves that form a beautiful bunch — tender and delicate with a nutty flavor and a hint of mint that is very satisfying in quick salads or lightly cooked like spinach. Very cold hardy, Corn Salad can be picked outdoors between November and January, when home-grown salads are genuinely rare. If you’ve never grown it, you’re in for a treat. 45 days.

Growing Notes

Sow outdoors in late summer or early autumn for winter harvest. Can also be grown in cold frames or unheated greenhouses. Sow seeds thinly, 1/4 inch deep, in fertile, well-draining soil. Thin to 4–6 inches apart. Water consistently but avoid waterlogging. Harvest outer leaves as needed, or cut the whole plant at the base.
