Golden Purslane has the same large, tender, succulent leaves and upright habit as our green purslane, but this variety comes in bright yellow-green. Purslane has the highest concentration of healthy omega-3 fats of any crop and is also rich in antioxidants. Leaves are sometimes pickled for storage. Very nutritious and easy-to-grow salad green. Purslane plants have been grown in herb gardens for centuries and are native to Europe. The golden purslane herb is upright with juicy, succulent oval leaves with a mild sweet-sour flavor. Golden purslane herb can also be added to stews and soups, and it is an excellent addition to stir-fries and salads. It makes an attractive garnish, too. Purslane can often be found growing in lawns or meadows. It will easily re-grow after being cut and spreads quickly after taking root. Purslane is considered a medicinal herb and a rich source of Vitamin C. In addition, it contains alpha-linolenic acid, which is an Omega-3 fatty acid.
